They have many different names. You need to know them in order to protect yourself and your family.

Enzyme-modified items

Fermented or cultured items

Gelatin is a processed proteins give gelatin its structure, hence it has MSG.

Glutamate: Monosodium glutamate or any ingredient including the word glutamate.

Malt extract

Malted barley

Maltodextrin

Natural flavorings

Processed or hydrolyzed protein – such as textured protein and protein-fortified items

Sodium or calcium caseinate

Soy protein concentrate/isolate

Textured protein

Ultra-pasteurized items

Whey protein

Yeast extract and autolyzed yeast and yeast is especially problematic when it is yeast extract, autolyzed yeast, or yeast food, but NOT plain yeast.

These Secondary Sources of MSG Generally Contain Some MSG.
They can give doses as high or higher than the primary sources listed above. Most are ingredient names, a few are processing methods.

1. Barley malt

2. Bouillon

3. Broth

4. Carrageenan

5. Citric acid

6. Disodium inosinate, disodium guanylate (These are not MSG, but make it more potent.)

7. Enzymes: containing, or called enzyme modified

8. Fermented: This process can generate MSG

9. Flavoring and flavor

10. Malt extract, malt flavoring

11. Maltodextrin

12. Natural beef flavoring, natural chicken flavoring, natural pork flavoring, et cetera

13. Pectin

14. Protease, Protease enzymes: These substances can produce MSG in processing

Consumers who choose food solely on taste are killing themselves with excitotoxins. And they are speeding the aging process causing obesity, premature wrinkles and many health problems. Since there's intense competition between the food companies for taste and customers choose foods primarily based on taste, they add a lot of “taste” by including flavor-enhancing MSG and other excitotoxins.

Dr. Russell Blaylock has studied these common flavor enhancers that many experts believe are hazardous to your health. He calls them Excitotoxins: The Taste that Kills . And he says you're more exposed to them than you realize.
MSG was taken out of baby foods in the late 60s. Today, most people don't know that it's in literally thousands of different processed foods, often under hidden names. Science is showing us that it could be a big part of what's making us so fat. One of the frightening effects of MSG is that it preferentially produces visceral fat. That's the harmful fat found deep in the abdomen. How does MSG cause obesity? Like aspartame, MSG is an excitotoxin ,a substance that overexcites neurons to the point of cell damage and, eventually, cell death. Humans lack a blood-brain barrier in the hypothalamus, which allows excitotoxins to enter the brain and cause damage.

One of the misconceptions is if you don't eat Chinese food, so I'm not really exposed to MSG, However, if you look at almost all processed foods, the vast majority of them have one or more forms of this high glutamate content in it. Since the 1950s, the Food and Drug Administration has considered MSG to be safe and the agency has not changed that position despite a large volume of research in the last 10 years. The government currently has no restrictions or warnings on MSG.

A curious thing about exposing animals to MSG early in life is that they prefer sweet foods, foods with sugar in it, carbohydrate foods, and they stay away from the foods that are healthier. And numerous scientists from around the world have repeatedly confirmed that glutamate in the diet can cause a range of problems in animals including obesity. But those who say MSG is safe argue that people don't consume as much MSG as animals are given in experiments. So they say people don't face glutamate damage. However this is not the case.

Foods with MSG and other excitotoxins, particularly in children, are certainly of a dose equal to what is seen in animal studies. Now the thing that's peculiar about a child is that they're four times more sensitive than an adult, pound for pound. And adults themselves are about five times more sensitive than the mouse, which is the most glutamate-sensitive animal.

That means is when people consume MSG have blood levels of glutamate that rises much higher and stays in the blood much longer than any other creature. The result is that humans are more easily exposed to toxic levels of glutamate. And babies in the womb and young children up to age three are the most threatened.

Foods that contain high levels of highly processed milk and soy protein are particularly bad. The processing breaks down those two proteins, releasing high levels of glutamate and aspartate. Both are excitotoxins and the brain can then be damaged. That damage can permanently damage the body's ability to control obesity.

The science indicates that all ages of people can face hard core obesity. Now the question is the public getting enough MSG in their food to trigger obesity at all ages? Estimates for MSG production and consumption vary widely, but almost everyone acknowledges significant and steady increases in the diet since 1960. And that may relate directly to government figures on excess pounds.

Over the last 40 years, the government says adult obesity has jumped from 13 percent to 34 percent. And the number of overweight youth has quadrupled to almost 20 percent , with a steady rise for 40 years. That doesn't necessarily prove the MSG has caused the increased obesity by itself but the fact that MSG caused obesity in lab animals in the 1960s indicates that it is a major contributing factor.

This whole category of substances like MSG, aspartame and other glutamates are excitotoxins. We know that people who have a lot of visceral-type fat have an extremely high incidence of heart attack and stroke, and arteriosclerosis. They also are more likely to have hypertension, suffer from insomnia, are more likely to have Type 2 diabetes, metabolic syndrome, and elevated LDL cholesterol.

With obesity continuing to rise, ignoring the MSG component could mean there's no end in sight for the ravages of excess pounds.
