The Diet For Living Longer

The average man in the United States consumes about 2,475 calories a day. That’s roughly 500 more, on average, than he really needs. Likewise, the average American woman consumes 1,833 calories, yet probably needs only about 1,600. One way to lower your caloric consumption would be to follow a simple formula. Men should aim for about 500 calories at both breakfast and lunch, while women should strive for about 300 at each meal. Both sexes can then easily afford 1,000 calories at dinner.

grapefruit

At the Hebrew University Hadassah Medical School, researchers have found that eating a grapefruit a day might he one of the easiest ways to reduce cholesterol levels. The group in the study consisted of 57 individuals with known high cholesterol levels who had recently undergone coronary bypass surgery (ages 39-72 years). They were divided into three groups, one eating a fresh red grapefruit per day, a second eating one fresh white grapefruit per day, and the third serving as a control group. All three groups continued their usual diet.

Cholesterol and triglyceride levels were tested in all three groups at the beginning of the study and at the end of 30 days. There were no changes in the control group, hut there were significant improvements in both groups eating the grapefruits. It should be noted that the most improvement was in those eating the red grapefruit. Compared to the control group, those eating red grapefruit had reductions of 15.5 percent for total cholesterol, 20.3 percent for LDL cholesterol, and 17.2 percent for triglycerides. This study is just one of many that demonstrate the health benefits of grapefruit. Other studies have shown that it can accelerate weight loss. Grapefruit has fallen out of favor with many doctors because it can interfere with some pharmaceutical drugs because it may either increase or even negate the effects.

watercress

Watercress, a lesser-known cousin of broccoli, offers a host of health benefits. Watercress is an exceptionally rich sourceof potent cancer-fighting isothiocyanates, including the much-studied compound known as phenethyl isothiocyanate, or PEIIC. Research indicates that a watercress-broccoli extract effectively suppresses production of an enzyme that facilitates the spread of breast cancer to other tissues. Scientists have also demonstrated that isothiocyanates in watercress suppress production of pro-inflammatory compounds such as prostaglandins, which are associated with numerous pathological conditions, including cancer. This suppression of inflammatory compounds may be yet another anti-cancer effect conferred by cruciferous vegetables.

Cancer researchers are also interested in watercress as a weapon against lethal lung cancers. Watercress is the richest source of a glucosinolate known as nasturtiin, which is transformed into PEITC in the digestive tract. In laboratory rodents, watercress-derived PEITC helped prevent lung cancer that is ordinarily triggered by a tobacco-derived carcinogen. Because epidemiological evidence associates increased intake of cruciferous vegetables with a reduced risk of prostate cancer, scientists sought to identify the specific compounds responsible for this cancer-preventive effect. They found that a form of PEIIC that is abundant in watercress inhibited the proliferation of prostate cancer cells and their ability to form tumors.

Studies have shown that PEITC inhibits the proliferation of cancer cells in the laboratory with surprising rapidity. This is very important, as PEITC and other dietary isothiocyanates in cruciferous vegetables tend to clear the body quickly through urinary excretion. Working with a type of human leukemia cell, scientists have discovered that PEITC and other isothiocyanates act on multiple cell targets to help fight cancer proliferation. After as little as three hours of exposure to PEIIC and other isothiocyanates, cancer cells experienced the full spectrum of these anti-cancer effects.

Scientists have also recently discovered that compounds contained in watercress induce phase I and phase II liver enzymes and these natural agents not only have anticancer benefits, but also provide detoxification support. This effect may explain their ability to inhibit the cancerous effects of a wide variety of compounds.

Protective compounds derived from vegetables, particularly cruciferous vegetables, may help to lessen the dangers of potent meat-derived carcinogens by preventing their activation or by increasing their detoxification. Scientists have noted that cruciferous vegetables help protect against DNA damage and pre-cancerous changes that can be induced by heterocyclic amines.
